To all those great cooks on the forum, do you have any appetising healthy recipes, that doesn't take an eternity to make?

Fajitas


Cut up chicken breast, green peppers, red peppers and onions. Season with a pinch of salt, some ground white pepper and some ground cumin.

Marinate the chicken with a mix of vinegar, tequila and the spices.  A little honey and some olive oil don't hurt either.
Start the chicken and when it's close to being done, put the veggies in. Onions should go in a little earlier than green peppers, IMO.

TBH, I very rarely use measuring spoons, so play with the relative quantities to suit your own taste. As a general rule, use more white pepper than cumin though.

Heat a tortilla. If you have an electric stove, drop the tortilla briefly on one of the heated coils, I've had less success with open flame burners, too much drying. Otherwise a short spell in a non stick or cast iron pan with no oil will heat them nicely. Running water over them and quickly drying with a paper towel helps to prevent cracking when you fold them.

Put chicken and vegetables into the tortilla and top with Queso Oaxaca (monteray jack also works well), fresh tomatoes and lettuce (anything but iceberg, I recommend green leaf).

Look up some websites on raw food. I use to eat nothing but organic raw food, and some of it was really simple to make.

things like broiling chicken breast with brown rice and steamed veggies fresh or frozen is simple and healthy.  you can add some olive oil, fresh grated garlic and some lemon juice and marinate your chicken in it.  Or add a greek salad so simple... tomatoes, red onions, cucumber, black olives, some feta cheese olive oil and white wine vinegar.... mmmmm....

whole wheat pitas or wraps filled with fried lean ground beef, tomatoes, lettuce, cheese, sour cream and salsa also good.  and super easy

go for brown rice and whole grain carbs, bake your potatoes also new potatoes with the skins on is really good for you. Lean meats beef and chicken and turkey are really nice to use.  You can use ground turkey to replace ground beef in many recipes the taste will be slightly different but will still be tasty

oh another thing salmon.... so easy just put your salmon in a baking dish lined with tinfoil add butter, lemon and garlic seal the foil and bake in a hot 400 degree oven for about 10-15 mins i think or until the fish is flaky so easy and so good...

Salmon is one of my favorite things to eat.


You're right about the ground turkey. Ground venison also works well in some recipes where ground beef is usually used, like chili or sloppy joes. It's leaner than beef, but some stuff, like spaghetti sauce it isn't the best for.
